This is another tough question. You need to draft the perfect
letter so that it means something to the professor once he reads it. Generally
a professor would read a mail in one or maybe two minutes. Your letter should
summarize the following things in that time :
1) You are interested in his work and his research.
2) What you have already done (your projects, internships or courses). And that you are capable enough to handle the work he might allot you.
3) How you can help him in his research or how you can contribute to his research.
4) The internship dates your available.
THEN COMES THE MOST IMPORTANT OF THEM ALL THE SUBJECT.
Y??? well it is this line that decides whether the professor will open your mail or it will go to trash. The shortest yet most important part of the email. It even decides whether your mail hits the spam or the inbox.
Here's an example on how to proceed.

A question regarding internship
Inquiry about internship opportunities
Inquiry on research opportunities
For the letter it could go something like :
Hi Professor Name
(Remember to greet the professor by First Name for professors from USA/CANADA/Germany for any place else you should greet them by their Last Name.
Mentioning the name of the professor instead of just writing a Hi or a Hello or a Dear Sir shows that you are actually interested and has gone through his page or profile or atleast know his name. Students are generally in the habit of spamming the professors and writing the same mail to 100s of professors. These mails usually start with a hi or a hello and sent to all the professors. Thus even the professors know it that the student is junk mailing and has not even gone through his research. Writing his names adds a more professional touch to it and also shows that the student has made an effort to reach out to him.
P.S. : writing Respected for greeting is an old habit not followed nowadays. Although I preferred it better.)

I have done the following projects/internships/course... in which i was responsible for the following work.. this grew my interest in the topic of the internship and thus I wanted to further work and explore this field of research.
I have read about your work on a similar topic/ I have read your research paper on the similar topics and was really excited and interested in your research. (Explaining a bit of research or what you liked about it or if you can propose some change to it that will increase it's efficiency or effectiveness that will be awesome).
I would like to know if there is any opportunity available by which I could pursue an internship from start date - To end date under your guidance.
